We would like to share with you all a LIVNTRUTH favorite, the fruit pizza. Share this delicious, fruity dessert with friends, family, and coworkers on holidays, for parties, or just because (our favorite occasion)....mmm😋, plant based life is so sweet!
Procedure
1. Heat oven to 350F.
2. Using an electric mixer, cream the butter and sugar together at high speed until the mixture is light and fluffy.
Add milk alternative and vanilla extract to the mixture. Beat until the ingredients are well-mixed.
3. Use a separate bowl for the dry ingredients. Whisk together the flour, baking powder, and salt. Mix this into the wet ingredients until they are well-combined.
At first, the dough will appear crumbly. Squeeze the dough together with your hands to make it stick together. It should be somewhat dry.
4. Wrap the dough in plastic and chill for at least 30 mins before rolling and pressing out.
5. On a lightly floured surface, roll out the dough until it is about 1/2-inch thick or press the dough in the tart pan and shape to pan (our method).
6. Bake 10-12 minutes, or until the cookie is lightly browned. If the cookie is not cooked thoroughly wrap the edges with foil and cook for an addition 2-3 minutes.
7. Allow the cookie to completely cool in pan.
8. Mix cream cheese with ¼ cup of sugar until smooth and spread on on entire cookie
9. Spread preserves over cream cheese
10. Decorate the cooled cookie with fruit as desired
