Procedure
Boil potatoes until easy to stick a fork completely through
Strain and Rinse the potatoes
Pour them back into the pot that they were boiled in or another large mixing bowl
Mash potatoes to your liking
Mix in butter, veggie broth, and seasonings until thoroughly mixed and the potatoes are smooth
Add in whipping cream or sour cream along with truffles (truffles should and will break apart while mixing).
Mix chives in or use as a garnish
Serve plain with butter and chives or top with your favorite meat and dairy-free gravy.
