Procedure
Follow the directions on the pasta in order to prepare it. Be careful to not overcook it. I suggest cooking just under al dente, as the pasta bakes it will continue to cook.
Preparing the rue or "cheese sauce":
using medium/high heat, melt butter in a large pot
Add flour and mix well
Add shredded cheese and milk and stir until melted
Once the cheese is melted add cream cheese and stir until mixed well
Finally, add sour cream and nutritional yeast and mix well until creamy and smooth
Season until it makes your soul feels good (but no salt)
Add cooked pasta to the rue and mix in well. Pour into a baking dish and top with additional shredded cheese,
Cover, and bake for 30 mins.
Remove the covering and cook for an additional 10-15 until the cheese melts thoroughly and edges brown lightly (you know what I'm talking about ).
